Each year, after temperature drops below 14 Fahrenheit, Takasago builds an Ice Dome outside main kura building. It is an igloo inside of which temperature stays about 28 F, with 90% humidity and no wind low temperature means nasty bacteria cannot survive, allowing them to make clean, pure, ultra-premium sake. Additionally, they separate clear sake from fermenting rice lees not by pressing, but rather by putting it into canvas bags and allowing sake to drip out slowly overnight.

Aromas of rice and ripe red plums. Bright, mouthwatering acidity leads into a soft and chewy texture from unfiltered rice particles. ricey flavor is joined by gently nutty and slightly fruity flavors in long finish. Nigori sake is made so that some of rice lees remain in bottle after pressing (unfiltered). Most Nigori is sweet and creamy, and thick with unfermented rice solids. Rihaku Nigori is a bit less chunky, but more fruity and complex than most Nigori sake.

Brewed carefully and slowly at low temperatures using traditional brewing techniques and Yamada Nishiki rice polished to 55%. Characterized by a well-rounded flavor with a solidness to flavor and fragrance, and a clean finish. Rihaku was named for a famous poet in China who lived from 701-762 and was famous for drinking a lot before writing. He was known to have said, I drink a bottle, and can write 100 poems. Faint aromas of raisins and earthiness. Overall slightly dry flavor but with nice fruity essences in recesses, supplanted by nice rice-like tones and a gentle sweetness beneath. They have won five straight Gold Prizes in prestigious National New Sake tasting competitions. water which flows up from springs here has been famous since Edo era (1600-1868). A rather fragrant junmai ginjo, bottled immediately without charcoal filtering. fine-lined flavor is as bold as fragrance, with a soft-edged fullness overall. Water in this region is very, very soft in comparison to most sake-brewing regions in Japan. This is a major contributor to unique taste and feel of their sake. It melts and absorbs into palate, taking flavor and fragrance with it in a very unique way.

Shimizo-No-Mai Pure Dawn is clear in appearance. aroma has hints of orange peel and light floral notes, with an underlying minerality. It's fresh and well-structured, with subtle notes of pear and Fuji apple. Creamy mouthfeel, finishes soft-sweet to dry.

Made with a unique blend of three rices: Yamada Nishiki, Gohyakumangoku, and Nihonbare and milled an additional 5% over grade minimum to create a dry cloudy sake with beautiful finesse. Citrus and banana aromas practically jump out of glass reminiscent of a tropical paradise. Soft, honey-laced nose with just a tad of fruitiness. Dry overall, but with a sweet element creeping out of background. Good richness and overall balance in a slightly dry profile. Tottori Prefecture where Mantensei is located is one of least populated regions of Japan - mountains, oceans and wooded areas vie for space with people in minority. clean air and cold winters make it ideal for sake brewing.
